Baking dish of almond berry breakfast bake with a golden oat top

Allergens: Almond flour and sliced almonds are tree nuts. Oats are often processed near wheat. Milk, egg, and butter are in the batter. Maple syrup is the sweetener.

Ingredients

Method

  1. Heat the oven to 350°F. Butter an 8-inch square baking dish.
  2. Stir the oats, almond flour, sliced almonds, baking powder, cinnamon, and salt in a large bowl.
  3. Whisk the milk, maple syrup, egg, melted butter, and vanilla in a measuring jug. Pour it over the oat mixture and stir until every oat looks wet. Fold in 1 cup of the berries and leave 1/2 cup for the top.
  4. Scrape the batter into the dish, level it, and dot the remaining berries on top. They will sink a little as it bakes, which is what you want.
  5. Bake 38 to 42 minutes, until the center is set and the top is golden. A knife inserted near the middle should come out clean of liquid batter, with a few oat crumbs.
  6. Cool 15 minutes before cutting into squares. The bake firms as it stands. Serve warm.

Storage

Cover the dish and refrigerate squares for four days. Rewarm a square in a 325°F oven for 10 minutes, or eat it cold. It also freezes well, wrapped, for a month.

Kitchen notes

Rolled oats, not steel-cut, are what set in this time. Steel-cut oats will stay gritty. If your berries are frozen, do not thaw them first or their juice will stain the batter gray; fold them in frozen.

This is breakfast or a late snack, not a pastry-shop cake. The maple syrup is measured so the oats still taste like oats. A spoon of plain yogurt beside a square is optional and not written into the method.
